I'm also a fan of You Look Nice Today (wish they would record some more soon...). I also enjoy Paul & Storm, The Bugle and This Week In Tech. Oh, and the very occasional episodes of Tiki Bar.
Apart from The Bugle, and much of what The Guardian and BBC Radio 4 spurt out of their podcast funnels, I listen to:

I enjoy British podcasts the most, and could bang on for hours about my views on 'on-demand' media and the lack of opportunities for mass-market syndication... *yawn*

I will be banned as an evil spammer if I even mention my own podcast, so I won't.
Personally I find that net@night from the TWiT network tends to surface lots of cool online stuffs. Big fan of MacBreak Weekly (as are others in this thread), and would also recommend Mac OS Ken for his very, very dry sense of humour.
I also like David Mitchell and the Radio 4 stuffs recommended above. All of which means I've recommend barely anything new and am just "one of the crowd". Bah.

As well as several already listed, I can recommend 7 Day Sunday, The Perfect Ten with Phill Jupitus & Phil Wilding, The Dave Gorman Podcast, and BBC Focus Magazine. For the most part, I listen to BBC and Guardian podcasts, they are somply better quality than so many other things available.
SRS and Answer Me This vie with Friday Night Comedy and Kermode & Mayo for the top spot in my mind, though.
I listen to SpyCast, a surprisingly good podcast about spies(real ones) It consists largely of interviews with ex-CIA, FBI and KGB staff. There was also an interview with Stella Rimington, Director-General of MI5 from 1992 to 1996. She sounded a bit simple.
